What is pot roast?

Pot roast is a term that describes a range of dishes where a cut of beef such as chuck or brisket is first browned and then slowly cooked in liquid until tender. The amount of liquid used varies from recipe to recipe but typically includes some combination of broth or stock, wine, and often other ingredients such as onions, garlic, and mushrooms.
